For one thing, food is an art form for me, and I never did know when to quit on a painting... Then, there's the challenge of making something even better - or at least a bit healthier.
So that's what prompted the first change: no sugar, and a very small amount of honey. Ultra ripe bananas are full of sweetness, they don't need any help!
Next was adding some wheat germ - good nutritious stuff to make up for the white flour. I could try it with whole wheat flour, but with the bananas it's pretty moist and ww tends to make things a bit heavier. Maybe next time I'll play with that...
But here's the latest: ELVIS SNACK CAKE!!
Instead of chocolate chips, I used about 1/2 cup peanut butter chips, and 1/4 cup of chocolate chips. Remember Elvis' fav snack? Peanut butter and banana sandwiches!!
I had just enough ripe bananas for one more cake - and about 1/2 cup of butterscotch chips left in the bag. So I threw those in, with about 1/4 cup chopped walnuts.
Both versions are yummy! Kimberly and I had a piece of each for dessert, and then I put the rest in the freezer, for the punks.

So, if you want to make everything that needs flour or oatmeal really healthy use quinoa flour or rolled flakes (internet mailorder). Bob's Redmill carries the flour. It is complete protein, contains all of the essential amino acids, and whole lots of other nutritious items.
