Do I want some WHAT??!!


The burning question on every gardener's lips this time of year is "DO YOU WANT SOME ZUCHINNI??"
If the gardener's zuchinni fairies are hovering, the answer will be "YES, of course I do!" (When was the last time you saw a zuchinni fairy? Yeah. )

So, as a back-up, no self-respecting gardener is without a list (very long) of zuchinni recipes. I just added this one to my bulging file:

Garden Zuchinni Bake (how original is that?!)

Mix thoroughly:
4 eggs (or 1 cup of Egg Beaters - the Southwest blend is yummy with this)
1/4 c. milk
2 T olive oil (or veg oil)
1/2 tsp. sea salt
2 cloves garlic, minced (or 1/2 tsp. garlic powder)
2 c. shredded cheese
Stir in 3/4 c. bakingmix (Bisquick or generic)
3 c. grated or diced zuchinni (squeezed dry with paper towels)
1/4 cup chopped red and yellow peppers (opt)
2 T. diced onion (opt)
Pour into oiled 9x13 pan. Sprinkle top with grated parmesan cheese if you want.
Bake 350 degrees, 45 minutes. Cool 5 minutes before cutting into squares. Good warm or cold!

Thanks for the new recipe. I AM going to try it. Otherwise, people with windows half way down...look out!!!
