At last!
My babies are growing up...literally. That tub of spinach beside my back door has now reached the glorious stage of EAT ME!!!!
Now I nab a few leaves every time I pass, which is several times a day as I head for the garden. Most I just munch on the spot or as a mobile snack.
Just as many make it into the kitchen, where they become a colorful part of snacks and meals. Here is lunch a few days ago: a crisp Wasa cracker packed with whole grains, topped with warm freshly made goat milk ricotta, sided by baby spinach, red peppers and a few cucumber slices. A spritz of honey dijon dressing was the final touch.
